Forget what the recipe books taught you – in this virtual class, you’ll learn the secret to making an authentic dish perfected over generations. ‘Nonna’ is the Italian word for ‘Grandma’ and you’ll have one of your own for an hour and a half, guiding you through each step from her kitchen in New York. There’s a different Nonna every month – all part of Enoteca Maria's rotating roster of international grandmothers, having moved to NYC with their parents decades ago – and each one has their own special recipe to share.

By the end of this class, you’ll have an authentic dish to devour and share with friends and family, plus your own set of skills to pass from one generation to another.

About the hosts

This class gives you the chance to cook with different grandmas from around the world. Each month a nonna will welcome you into their kitchen, virtually of course, and share their own homemade recipes that they have perfected over the years. The grandmas will immerse you in their cultural cuisine: telling stories, revealing secret ingredients and demonstrating the unique techniques that make their dish so special.

In December, your Nonna will be Dolly, who grew up in the small Sri Lankan town of Pannipitiya, near Colombo. Dolly and her siblings learned their culinary wisdom through their mother whom they would help in the kitchen every day. Dolly brought this wealth of experience with her when she eventually moved to New York, where she found a job as a babysitter and would cook the same Sri Lankan classics for the children she looked after. Now, Nonna Dolly works at Enoteca Maria as one of the many grandmothers, and is known for her hoppers (bowl-shaped pancakes made from fermented rice and coconut milk) as well as her signature fish, chicken, and pineapple curry.

Please note: December's class will be hosted by Nonna Dolly, and the following sessions will be hosted by different nonnas. The information on this page will be updated to include details on future classes and the style of cuisine involved. You'll also be emailed with this information at least 72 hours before the class begins.

What you’ll need

Ingredients for Rice:

  • 2 tablespoons of unsalted or salted butter
  • 3 cups or 600 grams of basmati rice
  • 3 cups (675ml) of cold water
  • 3 x cardamom
  • 1 cinnamon stick
  • 3 x cloves
  • Salt to Taste
  • 1/8 teaspoon of turmeric
  • Half cup (113ml) of coconut milk

Ingredients for Pineapple Curry:

  • 1 Pineapple
  • 1 medium onion
  • 1/2 teaspoon of mustard seeds
  • 3 x cardamom
  • 1 cinnamon stick
  • 3 x clove
  • Salt
  • 1 onion
  • 4 cloves of garlic
  • A few curry leaves
  • 3 x red dry chiles
  • 1/2 teaspoon of Turmeric
  • 1 teaspoon of chili powder
  • 3 tablespoons of cooking oil such as vegetable or canola

Ingredients for Chicken Curry:

  • 1lb pound (454 grams) of chicken breast
  • 1 teaspoon of chili powder
  • 4 cloves of garlic
  • 1 teaspoon of ground ginger
  • a few curry leaves 
  • 2 medium onions
  • 1 tomato
  • 1 teaspoon of turmeric
  • 3 x cardamom
  • 1 cinnamon stick
  • 3 clove
  • ½ teaspoon of fenugreek
  • 2 teaspoons of roasted curry powder
  • Half cup (113ml) of coconut milk

These are the terms and conditions on which we, ENOTECA MARIA supply the experience(s) to you. Please read these terms carefully before you purchase the experience. 


1.1 Please carefully review the description of the experience before you book to ensure you meet any requirements. If you do not meet any specified requirements, such as minimum age, we shall be entitled to refuse your access to the experience.

1.2 The price for the experience is included in the booking process and is inclusive of VAT. Any other costs incurred by you in attending the experience shall be solely borne by you.

1.3 These terms apply from the time you make your booking until (and including) the date you attend the experience.

1.4 Purchase of a ticket means you consent to filming, photography and sound recording which may include you as a participant, unless expressly stated otherwise.


2.1 If you cancel more than 5 days before the experience, you will get a 100% refund. However, if you cancel less than 5 days before the experience, the experience cost is non-refundable.


3.1 We may immediately cancel your right to attend and/or remove you from the experience at any time: (a) if you breach any of these terms (although for non-serious breaches we will first give you the opportunity to put things right); (b) if you breach any applicable laws, rules and regulations; and/or (c) you misuse or abuse the services provided at the experience, including by behaving in an offensive or disorderly manner.


4.1 To the extent permitted by applicable laws, the experience is provided on an "as is" and "as available" basis. Our liability is limited to the maximum extent permitted by law but nothing in these terms is intended to exclude or limit any warranty or liability which may not be lawfully excluded or limited in your country of residence (if any).

4.2  We accept no responsibility for any of your personal property brought to the experience.


5.1 This contract is between you and us and no other person shall have any rights to enforce any of its terms.

5.2 Each of the paragraphs of these terms operates separately. If any court or relevant authority decides that any of them are unlawful or unenforceable, the remaining clauses will remain in full force and effect.

5.3 These terms are governed by English law but you will benefit from any mandatory provisions of the law of the country in which you are resident.

5.4 You can bring legal proceedings in respect of these terms in the English courts. However, as a consumer you can bring legal proceedings in respect of these terms in a court with jurisdiction according to the laws of your country of residence.
