About the host

This experience will be hosted by a local chef from the Foodies agency, created by María Gutierrez, whose aim is to share the flavours of Colombian cuisine with the world. One of her tours was rated one of the 20 best food tours in the world by The Guardian newspaper in the UK in 2019 – so it’s safe to say you’re in good hands. Your class will be led by one of the agency’s top local chefs who specialises in Colombian cuisine, ensuring you learn the most traditional cooking methods, using only the most authentic ingredients.

  • This experience will be hosted in English, however your hosts also speak Spanish. 


  • Please note, as this recipe uses meat, this class is not suitable for vegetarians or vegans.

Ingredients and equipment

Please make sure you organise your space, ingredients and equipment to ensure you can proceed at the same pace as your hosts.


  • 1 x large bowl
  • Cling film
  • 1 x frying pan
  • 1 x chopping knife
  • 1 x saucepan
  • Two medium sized mixing bowls
  • 1 x fork for shredding meat
  • 1 x slotted spoon
  • Plastic bag or wrap
  • A large pot big enough to submerge the empanadas in hot oil. 


  • 2 1/2 cups or 473ml of vegetable oil for frying (not olive oil)
  • 1 1/2 cups or 187.5 grams of precooked yellow cornflower like P.A.N. or Maseca
  • ¾ cup or 94 grams of wheat flour
  • 1/4 cup or 31 grams of shredded beef or your favorite protein
  • 50 grams of white cheese or fresh cheese
  • ¼ cup or 59ml of guava paste or milk caramel spread
  • ¼ cup or 31 grams of shredded crab meat or tuna
  • 1/2 pound Andean potatoes (yellow)
  • 1 lulo (naranjilla) or passion fruit or mango
  • 4 tomatoes (ripe)
  • 1 onion (big)
  • 1 red sweet pepper
  • 1 habanero pepper, chili pepper or ají
  • 1 cup or 125 grams of chopped scallions
  • 2 garlic cloves
  • Coriander
  • 2 tsp of raw sugar or brown sugar
  • 1 tsp caster sugar
  • 1 tbsp white vinegar
  • 1 tbsp coconut oil or 1/4 cup of coconut milk
  • Cumin
  • Pepper
  • Salt
  • Water
  • Optional: ½ tsp cassava starch
